Cajun Chicken Tomato Salad
Cajun spice has grown in popularity in recent years and it combines many herbs and spices such as cumin, paprika, pepper and garlic powder to name a few. The hot spice of the Cajun, mixed with the coolness of the salad leaves and the juice of ripe vine tomatoes make this dish, a tasty
combination.
Preparation time: 10 Minutes Plus Marinating time Cooking time: 15 Minutes
Ingredients:
Serves Four
2 chicken breasts 50g Cajun spice
Salt and black pepper
1 tbsp. olive oil
225g mixed leaves
12 vine cherry tomatoes 4 scallions, chopped
100ml balsamic dressing (p268)
Method
1. On a chopping board, cut the tomatoes in half and chop the scallions 2. In a bowl, add the Cajun spice
3. Add the chicken breasts one at a time and roll fully in the spice 4. In a frying pan, add the olive oil and bring to a medium heat.
5. Add the chicken breasts to the pan and cook for 2 minutes on each side.
6. In a pre-heated oven F350° / C180° / Gas Mark 4, place the breasts on an oven tray and place into the oven for 10 minutes (p286)
7. Wash the mixed leaves thoroughly and drain/dry
8. In a large bowl, arrange the leaves, add the chopped cherry tomatoes and scallions. 9. Remove the chicken from the oven and slice.
10. Arrange the chicken on top of the salad and drizzle with balsamic dressing.
