Devils on Horseback
This is an interesting starter because the term ‘Devils on Horseback’ can refer to a variety of recipes. I learned of them when I was doing my hotel training. Since then, Devils on Horseback have been a favourite of mine and they are a perfect dish for cocktail events or as a starter.
The principle of the dish “on Horseback” refers to bacon, and in this case the “Devils” refer to chicken livers, but you can have all kinds of food “on horseback” such as angels, which are oysters but the ideas are endless.
Devils on Horseback are commonly served at Christmas time. I have no idea why, but I put them on as a special at The Shack Restaurant, all year round.

Ingredients
Serves Four
200g chicken livers
8 strips, streaky bacon
4 tbsp. olive oil
16 wooden cocktail sticks
Method
1. Clean the chicken livers (p285)
2. On a chopping board, cut the streaky bacon in half so you have 16 strips 3. Wrapthechickenliverinthebaconandskewerwiththecocktailstick
4. In a frying pan, add the oil and bring to a high heat
5. Add the skewered devils and cook for 5 minutes, turning regularly
6. Remove and serve
