Honey Glazed Crubeens
The Irish word for pig’s trotters is ‘crúibín’ and it is an Irish dish made of boiled pigs feet which is usually then battered and fried. In a way, they are the Irish version of chicken wings and they are considered a delicacy by many. Traditionally eaten by hand, they get a nod from Irish singer Liam Clancy in a version of “Galway Races.” Whether you like them boiled, baked or fried it is vital that you give these feet a chance and this recipe is a modern twist on an old classic. They really are ‘a step in the right direction!’

Ingredients
Serves 4
4 pig’s feet (cured)
1 large onion
1 large carrot
1 bunch de luibheanna (p46) 50ml Irish honey
Method

- On a chopping board, peel and slice the carrot and onion
- Wash the pig’s feet thoroughly
- In a pot, place the pig’s feet and cover well with cold water.
- Add the onion, carrot and bunch de luibheanna into the pot, bring to the boil and skim the
foam from time to time.
- Simmer for 2 to 3 hours or until the meat is soft and very tender.
- Remove the trotters (Crubeens) from the pot and allow to cool.
- Coat the trotters in honey.
- In a pre-heated oven, F400° / C200° / Gas Mark 6, place the trotters on a tray and bake for
20 minutes.
